Bus departs for the Culinary Institute of America, widely recognized as the world’s premier culinary college

3:30 p.m. - 4:30 p.m.
Welcome tour of the Institute led by a CIA student or staff member

4:30 p.m. - 6:30 p.m.
Culinary Lecture/Demonstration with Chef - Fall Tastes of the Hudson Valley
Enjoy three to five small plates with wine.

Global Street Foods with a Healthy Focus
Globalization, the media, international travel and trade has broadened most people’s culinary horizon; it has sparked a genuine desire to also explore street food, oftentimes beyond the local palate. Nowadays, many new dishes transcend geopolitical borders -- Tacos filled with Korean Beef and Kim Chi, Spam Sushi, Seafood Hot Dogs with creamy Savoy Cabbage, and Indian chai with tapioca bubbles. The objective of this class is to offer a new look at food served out of trucks, booths or mobile vending stations, to re-codify established classics and introduce new creations.  The recipes are written with a culinary professional or well versed food enthusiast in mind, providing inspiration and guidance through the wonderful world of casual street food dining and with a healthy focus. Bus departs from hotel for Hudson Valley Wine and Food Fest, one of New York’s premier showcases for NY wineries and gourmet specialty foods.  It features a NY Craft Beer Pavilion as well as hard ciders and distilled spirits. Ticket includes tasting glass and all wine/beer/cider/spirits samplings, private JHU tent area with seating, and talk by resident wine expert.
